Happy 4th!



Lee's Fruit Pizza

17 ounce sugar cookie rolls from Pillsbury (1-2, depending on size of cookie)
8 ounce block of cream cheese, softened
1/3 cup sugar
1 teaspoon vanilla
Fresh fruit

Spread one package of premade sugar cookie dough onto baking sheet, pizza pan, or other cooking dish. (Because this baking sheet was large, I used two packages of cookie dough, but 1 1/2 would probably be enough.) Cook as directed. Let cool completely.

Mix softened cream cheese (light is OK), sugar, and vanilla and spread evenly over cookie.

Put in refrigerator to cool. This will keep the fruit juices from running into the icing.

Once cool, place fresh fruit of your choosing on "pizza." Keep refrigerated. Serve and enjoy!

This is somewhat similar to the "4th of July/ citizenship" cake I made for Russell when he was naturalized!

Remember the one that rode in the car for 3+ hours to C-ville... and arrived as a cake pan of full of mushy cake/ frosting/ fruit/ fruit-juice soup.
